In a large skillet over medium heat, melt butter. Add chops and brown 2 to 3 minutes per side. Scatter onion and apricots over chops. Reduce heat to low. In a mixing bowl, combine broth, port, marmalade, ginger, garlic, and nutmeg. Pour over chops. Bring to a boil, reduce heat, cover and simmer until meat is tender, 15 to 20 minutes. Mix cornstarch with 1 T of the sauce and return to skillet. Cook, stirring until sauce thickens. Serves 4. |
