Greens Restaurant Cuisine
 
Chef Laura entered a competition and won a week in the kitchen at Greens Restaurant in San Francisco.

Many Valley vegetarians become geographically challenged when deciding whether to face east (Moosewood Restaurant in Ithaca, New York) or west (Greens) when offering salutations to the goddess of the garden. Sorry, Ithaca, but in the West's favor is Greens' San Francisco Marina location with a stellar view of the Golden Gate. Greens was launched in 1979 with Deborah Madison in the kitchen, Chef Annie Somerville is now the Executive Chef.

Laura Slama's journey to Greens began with a competition conducted by Women Chefs & Restaurateurs (WCR). Each year the WCR works with a number of organizations to sponsor a variety of scholarships. Laura entered the competition for a week-long internship at Greens and won. She wrote in her winning essay: "I hope to learn new flavor combinations that dance on the palate and delight the eye." Chef Laura kept a journal of her week in the Greens kitchen and it is a fascinating, witty read - full of all the frustrations and triumphs that go with life in a busy kitchen. (You can read the journal on her Web site.) She described her week to the folks at WCR thus: "In some ways, I feel that I started as a kindergartner and left a college graduate...." We know you'll agree that school lunches never tasted this good!

 


Chef Laura Slama left behind a career in high-tech sales, graduated with high honors from the Scottsdale Culinary Institute and is now the owner of Celebrated Cuisine. In addition to catering all types of private parties and special events, Chef Laura's Celebrated Cuisine produces Laura's Gourmet Granola, which is available at Sweet Basil and AJ's. Chef Laura maintains a busy teaching schedule through Celebrated Cuisine and at Sweet Basil, including a number of our popular Lunch & Learn classes at Noon on Fridays.

If you agree with that deep-as-a-canyon voice of cowboy actor Sam Elliot that "Beef, It's What's For Dinner" - you should still join us whenever you see one of Chef Laura's vegetarian classes. Deborah Madison, one of Greens' founders, frequently overheard comments from her customers like, "I forgot there wasn't any meat--it was so good!" Great vegetarian cuisine should be that good! But Chef Laura is not a Moosewood Bible-thumping missionary. She teaches all sorts of ways to cook meat, fowl and fish at Sweet Basil and as a caterer prepares it all the time. So if you do have an opportunity to take a "vegetarian" class with Chef Laura, you'll find that her great vegetarian recipes make wonderful side dishes for people incorporating less fat or fewer carbohydrates into their lifestyles. Chef Laura will show you that this is simply because these dishes taste so good.
